Tea.....A Drink With Jam and Bread~

Here at The Bluebird Cottage (what we call our home), most afternoons you will find myself and the kids in the living room eating a snack and sipping tea! Yes, my kids love tea!
 (but they have to drink it at the dining table)

My new favorite tea is Tazo Organic Apple Red~

Today Noah made some easy pop-overs for our snack this afternoon....the recipe is new to us and has just become a family favorite! We found the recipe in a health food co-op catalog.
{I just discovered the food co-op store in my favorite town,
its about a 10 minute drive up into the mountains!}

Quick and Easy Pop-overs

4 farm fresh eggs
2 cups milk
2 cups whole wheat flour

Blend in the blender until mixed good!
Pour in greased muffin tin (fill 3/4 full)

Bake in pre-heated (425 degrees) for 35-40 minutes!

Enjoy with peanut butter and homemade jam!

Please Join Me For My Monday Meme.......

Sauted veggies before I added the top layer


Garden Veggie Enchiladas

Fresh tomato sauce (made from garden tomatoes) you could use canned
Envelope  powered enchilada sauce mix (make as directed on package)

Corn tortillas
Cheddar or Colby/Jack cheese (small amount)

Veggies for the center:

Mushrooms sliced
Zucchini sliced into rounds
Onion chopped
Carrots steamed

Saute veggies in pan with olive oil until tender.

Most of the veggies were from my garden!
(all but the mushrooms and carrots were from my garden,my carrots did not do good this year:( Most years I have a ton but not this year!)

I make single serve trays of enchilada~
I layer:
sauce,corn tortilla,then a bit more sauce...
next add sauteed veggies (about 1 generous cup)
Sprinkle with a bit of cheese (about 1/4 cup or less)
Top with another corn tortilla and a bit of enchilada sauce

Bake at 350 for about 35 minutes~ Enjoy

Computer Trouble!

Hi all,
For some reason today, my computer will not let me download images! :( 
I have been sitting here for over an hour trying to figure it out, to no avail. So unless my hubby can fix the problem when he gets home tonight, I will be forced to postpone my
"Celebrate The Harvest" meme.

Celebrating The Harvest Meme Starting Monday~


I would like to start a  "Celebrate The Harvest" meme.

I have never done this before so bare with me as I figure out how all this will work!
(I want to have folks join in and some how link up)

So what is Celebrate The Harvest?

It is (or will be) a recipe share. How are you using the veggies, herbs or fruit you grew in your garden?
What creative dishes do you make to use your home grown goodness?

I want others to participate by linking up......I'm not sure how to do this part. I will try to do a Mr. Linky but not sure how. I might have to do it rookie style. (no laughing allowed) lol :)

I will start the first "Celebrate The Harvest" post on Monday Sept.27

 It is OK to participate and share recipes of garden harvests of years past. This year was not a good growing year for most of us. All are welcome to participate!

Maybe you usually grow beets and carrots but they did not do good this year (like mine)......share anyways do you add them to stew....roast them?

Its My Birthday~


Today is my birthday and hubby decided to take me and his parents out for a nice dinner (no kids)!
We bought the kiddos pizza then the 4 of us adults headed off to the Olive Garden to indulge!
I got my fill fast.....and had to box up over half my dinner!

We came home and watched Meet The Parents on TV. (It just got over)
I came on-line to see if Amy from Raising Arrows had her baby~ You are on my heart and in my thoughts and prayers (as you are every night).
Praying that your baby arrives soon and safely! :)

I had a wonderful birthday~
This morning my dog Jasper graduated from his Basic training class and we then enrolled in the Intermediate class due to start in 3 weeks!

My In laws will be leaving on Monday.......It will be nice to get back on a regular schedule once they are gone!
Grandpa had a cold when we arrived.....then Grandma got one.....then just as Grandpa started to feel better he came down with another cold!.......They then shared it with my 5yr old Jackie :(

Our State Fair is going on for another week. Hubby plans to take a few days off  next week and we will go one of the days! My kids love the hobby hall collections,art,quilts,veggie and fruits from the local granges! Oh how we love the fair!

Well its late here and my bed is calling~ so good night blog friends~

Preschool Time In Our Home~ Part 1

While working with my older kiddos on home school work, Olivia my 2 (almost 3yr old) works on puzzles or other "blanket time" activities. {blanket time can be used when mom or dad need 20-30 minutes to get something done}
This week we are blest to have my husbands parents out for a visit! Grandma is helping Olivia with her letter recognition. Its OK to use older kids games such as Boggle JR. to let even your Little's get familiar with letters.

Blanket Time~

Blanket time is something I read about in the
Duggars book 20 and Counting.

The idea is to practice quiet activity time on a blanket.
Start out requiring only a few minutes on the blanket then gradually increasing the time up to 20-30 minutes.
The child uses his or her "special" blanket and "special" toy or activity to play with on the blanket.
Children are not to bother another or take toys off anothers blanket.

Moms (or dads) can use this time 20-30 minutes to make dinner,do laundry,read or what have you.

Once your Little's are trained, you can use this technique anywhere! The doctors office or other times you might have to wait some place!
I have a closet of all our blanket time activities.
I will post again soon and show you more of the types of things we use!
 (we now don't always have to use blankets) My kiddos know to leave each other alone. Blankets are nice though as,
children must keep ALL parts of their toy ON the blanket!

Where Did Everybody Go? And Giveaway Winner!

Today was back to school day for my 3 older kiddos. {I only home school my youngest 3}

It seems like I should take the morning to relax? Right?

Well my Inlaw's are due to arrive in the next day or two for a 2 week stay! There is much needed to get done before they get here (with a large brood of kiddos I can't start cleaning to early or it just gets messed up again) lol

My to do list:
 6 loads of wash
1 load of dishes
clean dining table
wipe counters
clear clutter from the coffee table
clean both main bathrooms
clean sheets for guests bed

Chores for Noah
Vacuum the downstairs
Take out trash
Feed the chickens and check for eggs
Tidy up the game room


Jackie and Olivia
Fold the bath towels
Load both bread machines
Tidy their room
Check the garden for ripe produce

All my little ones also have their home school work to do as well!
Noah does some of his work independently but the girls need me to sit with them to talk them through their homework.

As you can see I have a busy day and it 9:30 here so I better get started!

Yam and Black Bean Buritto Recipe~


Yam and Black Bean Burrito

Boil and mash 1 yam (or orange sweet potato)
1 can of black beans rinsed and warmed
A bit of cheddar or other favorite cheese shredded
Corn tortillas
Ground Cumin
Olive oil for frying

~~~~~~~~~~~~~~~~~~~~~~

Take corn tortilla and sprinkle with cumin
then layer a bit of each of the other ingredients
yams,black beans and cheese
fry in a bit of olive oil then fold and eat!

Your could top with fresh garden salsa if desired!

Fancy Pear Recipe and Giveaway Reminder!


In a small bowl stir together: 
1/2 cup cream cheese, 1/4 cup brown sugar and 1/4 cup honey
a pinch of salt and a dash of vanilla.



Take 6 pears......cut in 1/2 and core.
Lay pear halves cut side down on a plate and microwave for 2 minutes or until fork tender.



To serve:

Place a pear half on a saucer, put a
 small dollop of cream cheese sugar sauce in the center of pear.
Top with homemade whip cream and chopped pecans and enjoy!

My kiddos just love these easy pears!
The cream cheese sugar sauce also makes a good dip 
for apple slices!
